Tofu Mayonnaise

Use as you would any Mayo
Cake Soft Tofu
1/2 Cup Water
1 Tbl Brown Rice Vinegar or Umeboshi Vinegar
1 Tbl Olive Oil
1 Tbl Lemon Juice
1/4 Tsp Dried Mustard
1/2 Tsp Sea Salt to taste
Step 1
Combine all ingredients and blend until thick and creamy
The Mayonnaise will store in refrigerator for several days. If it seperates, just stir
