Taco Salad

A Lunch or Dinner
1 lb. of ground turkey, chicken or beef
1 tsp Extra Virgin Olive Oil
1 Garlic clove (large, minced)
1/4 cup Water or a little more
1 1/2 tsp Taco Seasoning
2 tbsp Plain Greek Yogurt
6 cups Mixed Greens
1 Avocado, sliced
1 Yellow Bell Pepper (medium, sliced)
1 tbsp Red Onions
Add the oil and garlic and sauté until fragrant, about one minute, over medium heat.
Add the ground meat, breaking it up as it cooks. Cook until close to done, adding the water and taco seasoning and mix well. Cover and cook until the ground meat is cooked through.
Thin the Greek yogurt with a splash of water to create a dressing.
Add the mixed greens to a bowl and top with the seasoned ground meat, avocado, bell pepper, and onions.
Drizzle the Greek yogurt dressing on top.
