Sweet Potato Muffins

1 cup Whole Wheat Pasrty Four
1 cup unbleached White Flour
1/2 Tsp Baking Soda
1/2 Tsp Sea Salt
2 Tsp Baking Powder (aluminum free)
1/2 Tsp Cinnamon
1/4 Tsp Nutmeg (optional)
1/2 cup cooked pureed Sweet Potatoes
1/3 cup walnut or avacado oil
1 cup nut or soy milk
1/2 cup chopped Walnuts
Step 1
Preheat over to 400F
Step 2
Combine dry ingredients in a large mixing bowl
Step 3
Combine Sweet Potatoe and remaing wet ingredients
Step4
Combine wet ingredients to the dry ingredients and mix just until moisted. Add Walnuts
Step 5
Spoon into prepared muffin tins and bake for about 25 minutes
Serve warm and enjoy!
