Stuffed Acorn Squash
Serves 2-4

Simple, delicious and healthy!
1 -2 Acorn Squash according to servings
2 cups cooked grain ( Barley, Rice, Buckwheat or Quinoa)
2-4 Scallions, chopped
2 Tbls. roasted Sunflower Seeds
1 stalk Celery, chopped
Tamari Sauce to taste
Step 1
Preheat overn to 350F
Step 2
Wash Squash, slice in half and seed. Place cut side down on baking pan. Add 1/4 cup water and bake for 30 minutes.
Step 3
Combine grains, sunflower seeds, vegetables and Tamari Sauce
Step 4
Remove squash from oven and turn rightside up. Fill wilth prepared filling and place back into oven for 15 - 20 minutes until lightly browned.
