Stew~ Butter Bean and Kale Stew
Serves 2

A Comforting Stew For Two
3 cloves of Garlic
1 cup cherry Tomatoes
1 can Butter Beans
2 cups of chopped Kale
1 Tbls Olive Oil
1/2 cup Coconut Milk
Salt and fresh ground Pepper to taste
*Of course you can double or triple the ingredients to allow for more servings.
Step 1
Saute the garlic, tomatoes, kale and beans in olive oil, for 5 minutes.
Step 2
Add the Coconut Milk and simmer 15 minutes
Serve and enjoy!
