Soup ~ Grain, Green and Bean Soup

Serves 4

Soup ~ Grain, Green and Bean Soup

Easy to make

  • 1 Tbls Olive Oil

  • 1 large Carrot, chopped

  • i Celery Stalk, chopped

  • 1 small Onion, chopped

  • 1 cup vegetable stock, beef, chicken or bone broth

  • 1 cup packed, sliced Greens (Kale, Collards, Bok Choy)

  • 1cup cooked Garbonzo Beans

  • 1 cup cooked shell pasta ( can use wheat free)

  • Sea Salt to taste

  • Fresh bround Black Pepper to taste

  • Tamari to taste

Step 1

in large saucepan heat olive oil, and saute carrot, celery , and onion for 5 minutes over medium heat just until limp.


Step 2

Add broth and chopped greesn. Cover and simmer for 10 minutes.


Step3

Add cooked beans and past, simmer until throughly heated.


Step 4

Season to taste with Sea Salt and Tamari.


Serve, garnished with Parsley and / or Scallions
