Soup ~ Beef, Barley, Vegetable Soap1

1 LB. Stew Beef cut inot 1" pieces
1/3 cup whole Barley
1 cup finaly sliced carrot
1 cup choped celery
1/3 cup chopped onion
1 clove of Garlic
2 cups chopped fresh tomatoes (Unless you are not eating nightshades)
Step 1
In a large pot sautee the stew beef in olive, oil on low-medium heat utntil wll browned. Add barley and eight cuups of water, vegetable water or stock, meat broth or bone broth. Simmer for about 1 hour or until barley is cooked.
Step 2
Add the vegetables. Simmer just until vegetables are tender and before they loose their bright colors. Season with salt and pepper
Serve with chopped parsely
This can be frozen for another day and on that day add fresh vegetables, simmer just until the vegetables are tender
