Salad ~ Grape, Mint and Feta Salad
Serves 4

1 cup seedless grape halves are the most nutrient dense)
1/2 cup crumbled Feta Cheese
1/4 cup chopped walnuts or pecans
1 Tbsp freshly squeezed lemon juice
2 Tbsp extra virgin Olive Oil, preferably unfiltered
2 Tbsp fresh chopped Mint or 2 Tsp of dried
Step 1
Combine the grape halves, feta cheese, nuts and mint in a medium bow.
Step 2
In another small bowl, whisk together the lemon juice and olive oil. Pour the dressing over the fruti and toss until combined.
Step3
let rest at room temperature for 30 minutes.
Serve and enjoy!
