Plum Sauce
Yields 1 1/2 Cups

A Savory Sauce For Meats
1 Clove of Garlic
12 Plums, pitted, cut in 1/2
1/2 cup Red Wine
1 TBS unsalted Butter
1/8 TSP Salt
1/8 TSP ground Cloves
1/2 TSP Cinnamon
1 TBS Honey
Step One
Push Garlic through a garlic press and set aside
Step Two
Combine plums and red wine into a medium saucepan and simmer, uncovered for 10 minutes. Then cover and continue simmering for an additional 10 minutes.
Step Three
Add the pressed garlic and the remaining ingredients, cover and simmer for 10 more minutes.
Step Four
Add a tablespoon or two of water and pour into a blender. Pulse until peels are finely chopped.
Serve warm over Lamb, beef, pork or poultry
