Lentil Walnut Loaf

Serves 3 - 4

Lentil Walnut Loaf

Perfect for a meatless dinner

  • 1 Cup Lentils that have been cooked and drained

  • 1 small Onion

  • 1/4 cup Wheat Germ

  • 1/4 cup Bread Crumbs

  • 1/4 cup chipped walnuts

  • 1 Tbl Rice Flour

  • 1/4 Tsp Sage

  • 1/4 cup vegetable broth ( can use chicken or beef broth or bone broths as substitue)

  • 1 Tsp Rice Vinegar

  • Pinch Sea Salt

Step 1

Preheat overn to 350F


Step 2

Saute oion in oil until soft


Step 3

Mix all ingredients togeter and place in an oiled loaf pan


Step 4

Cover tightly and bke for 30 minutes. Remove cover and back an additionl 15 minutes or until browned.


Serve hot or cold
