Herb Lemon Chicken
Serves 2

Enjoy with a side of wild rice and a garden salad
Ingredients
2 organic chicken legs and thighs or 2 breasts
1 cup of spring water
1/2 cup of organic white wine (optional)
1 tablespoon of dried or fresh mixed herbs (oregano, thyme, marjoram, sage)
The juice of 2 fresh lemons
1 red onion
1 tablespoon unsalted butter
6 shakes of garlic powder
2 pinches of salt
Wash the chicken pieces well. If not already, cut the legs from the thighs and place them in a glass oven dish.
2. Place the water in the dish. Bake at 350 for 20 minutes, until the chicken is done.
3. Turn the chicken over and pour the wine over the chicken pieces. Sprinkle the mixed herbs and
garlic powder on the back side of the chicken.
4. Peel and slice the red onion into the juice at the bottom of the dish and cook for another 20
minutes.
5. Add the butter and salt to taste. Pour the remaining juice into a bowl to use when served.
