Ground Beef Meatloaf
Serves 4-6

Dinner
2 lb. ground beef (grass fed)
1/2 onion, finely chopped
1 green pepper, finely chopped
2/3 cup bread crumbs (from sprouted or sour dough )
2 eggs
1 tsp. thyme
1/4tsp salt
1/8 tsp black pepper
1 cup tomato ketchup
Preheat oven to 325 F
Add all ingredients into a bowl and mix with your hands until all ingredients are thoroughly combined.
Place into a baking dish with 2" sides, forming into a loaf. Place an indent along top, length wise, filling with additional ketchup.
Bake for approximate 1 1/4 hours.
(You can also place vegetables into the oven to roast while the meatloaf cooks, for a complete meal)
