Greens Creamed

Comfort food because of the creaminess
1 LB fresh Greens ( Kale, Collards, Spinach, Swiss Chards, Broccoli Leaf, etc.)
1 small onion or Shallot
1 Tbl Olive Oil
11/2 Tbl Oat Flour
1/4 Tsp Sea Salt
Dash of Nutmeg
3/4 cup of hot Vegetable Broth, Bone Broth or Water (Use 1/4 Tsp Herbamare Seasoning if using Water)
Step One
Wash Greens and chop
Step Two
Steam briefly until bright green and wildted. Drain through in mesh strainer, pressing to extract as much liquid as possible. Set aside. Frugal Tip...(Retain the water and freeze to be used in soups at a latter date)
Step 3
Mince the onion or shallot. Using a 1 quart saucepan heat oil and saute onion until transparent
Step 4
Add Oat Flour, sea salt and nutmeg, mix well. Add hot broth gradually while stirring to aoid lumping, untl mixture comes to a boil. Turn down heat and simmer for 1-2 minutes and then add chopped greens and cook over low heat until greens are hot.
