Carrot + Collagen Energy Balls
Makes 12

A slightly sweet and healthy snack
2/3 cup packed grated carrots
2 tablespoons of dried cranberries
(organic raisins here could also be an option)
1/2 cup walnuts
1/2 cup almonds
1/4 cup shredded and unsweetened coconut
9 pitted dates
2 tablespoons hemp seeds
1/8 teaspoon MCT oil or balanced oil or olive oil (your choice
1 tablespoon of protein powder or collagen powder (optional)
1 teaspoon cinnamon
1/4 teaspoon pumpkin pie spice
1/8 teaspoon sea salt or Himalayan salt
Place all ingredients in a food processor and pulse until all ingredients are mixed and come together.
Place the "dough" into the fridge for about an hour. This makes it easier to form the balls.
Form dough into balls and roll into shredded coconut.
Store covered in the fridge for up to one week. Enjoy!
